BASIC CRêPES

Shrove Tuesday or pancake day is on 16th February this year. If your pancakes are less
than perfect then try our foolproof recipe. Makes 8 crêpes

125g plain flour
Pinch of salt
2 eggs
315ml milk
3 teaspoons butter, melted
Vegetable oil for cooking
Lemon juice and sugar or Nutella

Sift flour and salt into a bowl. Make a well in the middle and add eggs and a splash of milk. Beat, working in all the flour. Beat in the rest of the milk and the melted butter

Heat a little vegetable oil in a 17.5cm
pancake pan, barely covering the base. Pour in 2 – 3 tablespoons batter, tilting the pan so the batter covers the base thinly and evenly. Cook on a high heat for about 1 minute, until lightly brown underneath.

Turn the crêpe with a palette knife or turner and cook the other side for about 30 seconds. Remove from the pan and keep warm,
then repeat until all the batter is finished. Serve with lemon juice and sugar or Nuttella.
